Scientific name: Colocasia esculenta
Eddoes in Costa Rica it is also known as Ñampi, Chamol or Malanga It is a comestible used to prepare soups with other vegetables and meat, is also consumed fried sliced or stew (boiled in salted water) in Costa Rica or Panama.
There are different types: Malangas, Eddoes, Taro, Islander, White and Lilac
“Corm-s -” = central stem underground cylindrical or spherical called corm; which produce cormelos, roots and leaves (corm = edible part or fruit)
The eddoes is one of the first crops used by humans, since their history dates back to the most primitive cultures. This plant is herbaceous, reaches up to two meters tall, the leaves are long and yellow -green, in the period of ripeness of the corms.
A central corm, produces cormelos on sides, the pulp color is usually white or light purple. This plant usually does not produce seeds, feature that can perhaps be attributed to a long clonal selection over time. Pulp generates hydrogen cyanide, which is removed by baking.
The center corm and cormelos are used in human and animal nutrition. Once cooked, pulp is soft, very good for digestion and a pleasant taste. In Costa Rican food is prepared in soups with other vegetables and meat (beef pot), sliced or thick chips or simply boiled in salted water (boiled).
It is regarded as a great food because it contains a lot of nutrients, carbohydrates and proteins that are necessary to maintain a healthy and balanced diet.
This tuber contains large amounts of dietary fiber, which helps regulate and speed up the digestive process and reduce cholesterol in the body. In addition, digestion requires a smaller amount of stomach acid compared to other tubercles, which helps reduce the burning sensation in the chest and throat, associated with gastroesophageal reflux disease.
Also, its sodium content is very low and has no cholesterol, so include it in the daily diet is a great way to avoid the risk of getting heart disease, high blood pressure or overweight.
